The best of both cutting edges in one superior knife from Henckels. A really nice knife - Reviewed on 2008-04-14

This is the first Henckels Twin-logo I have had and it is the best knife I've had. It really takes less effort to use this knife than others I've owned (including other knives I've purchased at Amazon).

The weight, balance, and handle size work for me.
Glad I got it on a Friday Sale when it was available.

I think the next time I decide I need a new kitchen knife for any purpose it will be a Henckels Twin-logo.
My "Go To" Knife of Choice - Reviewed on 2007-12-06

When working in the kitchen, this knife is my "go to" choice. The $40 price was phenomenal and great motivation for me to take a purchasing leaf of faith. As a result, I am hooked on Henckels. Now I own their 10 slot knife block and Henckels Pro S 3".

As a knife novice, I initially purchased a more expensive MAC HB70 Chef's Knife based on excellent reviews. The thinner handle was torture on my wrists/hands after hours of holiday prep work last year and ultimately, the blade, while razor sharp upon arrival, has since required constant re-sharpening (I had the impression this Japanese knife would keep its edge much longer). I also experienced a Messermeister 8" Chef's Knife in cooking class, which for me, was just okay.

Then I purchased this Pro S Multi-Edge Henckels and love it. The knife is weightier in the hand; yet comfortable to hold and grip. The combination straight/serrated edge is a godsend. I used it constantly this summer to cut through melons with ease. The straight-edged forward section is excellent for establishing a beginning cut and the serrated edge sawed easily through tough rind or soft pulp. The edge still remains sharp.

I highly recommend this knife and intend on purchasing another as a gift for a cooking buddy. While I know she has not one but two sets of expensive knives in her kitchen, I think this Multi-Edge would be a unique choice for her or any serious cook.

There's not much to complain about here except the price as Henckels knives are usually very pricey. Some people have concerns about how they'd sharpen the multi-edge blade which could be an issue once I get to the point of it needing sharpening. But this knife is awesome - heavy duty, oozes quality!

I was afraid an 8" would be to big. It wasn't. This knife is perfect. It is well balanced, easy to use, stays sharp and the multi edge makes the first cut on stuff like tomatoes easy.
I always found the price of these to hihg for my blood when you find cheap knives easliy in the stores. Well I have dumped most of my cheap knives for this. The price was right at Amazon and if I see another bargain for this brand in a different size or style I'm getting it.

Expected the knife to be sharp. was not dissapointed. it was about 2x the weight of my previous knife, but it wasn't a burden. what did provide was quick and painless chopping ability of the veggies. im not sure if i care about middle being this 'wave' pattern, to me all it does is create issues with sharpening it, but for $29 its well worth it
