I've been upgrading cookware and decided to buy it piece by piece rather than getting a set. This is a pan that I purchased to be able to get versatility and performance in one pan. It's filled that role and then some. The construction is top notch. Heavy, but not dutch oven cast iron heavy. Well built and designed. The handle on the lid stays cool to the touch even after 30 minutes of vigorous boiling, the handles on the sides likewise unless they're placed over open heat (let's say you don't center it over a burner). Because of the steamer insert this pan works well as a steamer. Because of the high sides and non-stick surface and thick bottom (and sides) the pan also can serve as a high-walled skillet. I notice the pan retains heat very well (again more nice design on this piece). Though I wanted a highly versatile pan, suddenly I find this is the pan I reach for most of all, whether for soups, or sauteing, or steaming, or for many of my cooking tasks that normally I used a special pan for, this versatile saucier just seems to work. I'm more an All Clad fan, but the performance of this pan is winning me over to Calphalon One. Also the price/performance ratio is very nice, excellent performance and great price. Did I mention the glass lid? It also really makes a difference in the extra versatility of this pan. The non-stick surface isn't like the sprayed on teflon pans, rather it's bonded and a little rougher. It's not absolutely 'no-stick' but offers a little grip. The real benefit here of a bonded coating is that it's much stronger. I usually use non-metallic utensils, but every now and then might use a metal ladle for instance, and nary a scratch can be seen, it's just an excellent surface. Overall I can't find a weakness and am very satisfied with this pan.
