The easiest technique for closing the cavity of a stuffed bird is to use poultry lacers. These small skewers are pinned through the skin of the fowl, around which twine is laced as though you were hooking up ice skates. With rounded ends for easy removal, these sturdy lacers should never bend and will last for years. A sketch on the back of the package shows you just how to use them, but don???t forget that you???ll need a ball of white butcher???s string. By the way, keep the lacers in their storage tube: loose lacers in a kitchen drawer, like socks in a dryer, tend to mysteriously vanish.
