KitchenAid's durable, professional-level bakeware is for home bakers who take their treats seriously. This 17-inch cookie sheet will bake about 20 chocolate-chip cookies or biscuits at a time. Constructed of heavyweight carbon steel, the sheet distributes heat evenly, resists warping at high temperatures, and bakes cookies to perfection. Large rolled edges and oversized rims add extra durability and make the cookie sheet easy to lift out of the oven even when wearing bulky oven mitts. Baked goods slide right off the pan due to the SlideEase nonstick coating and the unique Slider design. This design puts a ramp at one end of the sheet so you can tilt the tray and slip your baked goods right onto a plate; otherwise, the bottom of the cookie sheet rests at the same height when the sheet is laid flat. KitchenAid bakeware is safe for use with metal utensils, but should be hand washed to preserve the nonstick coating. Like the other Kitchenaid nonstick bakeware, this cookie sheet is made from very heavy gauge metal and, unlike Ecko and even Wilton, the nonstick coating is thick and durable.
Don't gouge the surface with metal implements, don't overheat the the cookie sheet (450 F max), and don't use an abrasive nylon pad like a Scotchbrite to clean it. The nonstick surface is so effective that there should be no need for harsh cleaning. Even seriously baked on foods should come off after an hour of soaking in warm water.
From reading the descriptions, I'm not sure what difference there is between this item and the Kitchenaid 17-Inch Slider (item K2901), other than the fact that I paid twice as much for this item. I bought two of them, and they're very nice. This is probably a lifetime purchase, unlike all other nonstick bakeware I've ever bought, so I'm trying not to be too upset by the price. But for those still shopping, look for the 17 Inch Slider.
