With aluminum cores enclosed by stainless-steel layers, Calphalon's Tri-Ply Stainless pots and pans deliver the attributes of both metals. The aluminum cores conduct heat quickly and uniformly across the pots and pans' bottoms and all the way up their sides. The 18/10 stainless-steel interiors and exteriors are easy to clean, resist scratching, denting, warping, and corrosion, and are nonreactive to acidic food. This beautiful roasting pan, polished to a mirror finish inside and out, measures 16 by 13 inches, ample for a 19- to 25-pound turkey, two chickens, or a massive prime rib. It's also great for baking lasagna or a party-size cake, and its handles are large enough to accommodate oven mitts. Accompanying the pan is a nonstick rack--with handles of its own--to lift food off the pan's bottom for all-around roasting and browning. The pan goes safely into the dishwasher, although hand washing better preserves the mirror finish, and carries a lifetime warranty against defects. --Fred Brack

This pan is very high quality. It certainly has the best cost performance of the roaster pans out there. It is sturdy and designed well. Like everyone else says the clean up is easy. Even though it is stainless it out performs my other non-stick pans. I have roasted a 26lb turkey in it and it came out great as have all other smaller turkeys I have roasted in it. I highly recommend this roaster pan.

I wanted a roaster that is not non-stick and sturdy enough to put directly on my gas cooktop, WITHOUT spending a fortune. I was looking for something I could sear meats with, and after roasting in the oven, deglazing the pan without fear of warping it. This is perfect.

"During our 1999 rating of roasting pans, we decided that the upright handles, roomy interior, and sturdiness of All-Clad's Stainless Steel Roti ($275) justified its hefty price. Since then, however, we've noticed that our top-rated pan has a tendency to warp slightly on the stovetop while browning roasts or deglazing fond. (The Roti lacks the clad construction-an aluminum core sandwiched between layers of steel-that makes other All-Clad cookware so reliable.) So when we saw that Calphalon's fully clad Contemporary Stainless Roasting Pan features a similar design-and for a mere $100-we brought it in for the challenge.

To our delight, the Calphalon did not warp on the stovetop, and its lighter weight made it more responsive to burner adjustments than the All-Clad pan. This new Calphalon roasting pan has everything we want, including a reasonable price.

UPDATE: Our July/August Roasting Pan Update highlights Calphalon's Contemporary Stainless Roasting Pan ($100). In the past, this pan has been part of their Tri-Ply stainless line. Until the Tri-Ply Stainless inventory has run out, look for our favorite roaster under either of those Calphalon lines."

1/16/06: I see Amazon has virtually doubled the price. Now $199.

5/11/06: Bed, Bath & Beyond (along with others) has the Calphalon 'Contemporary' (same as the Tri-Ply) on sale at $99.95. Normally, you can also get a 20% off coupon from BB&B so this sounds like a good alternative.

Despite what some reviewers say, there is a very obvious difference in the gauge and quality of metal used in this pan and the All-Clad roasters. The difference is obvious if you compare them head to head in person, which I did today. That said, this is still a good price on these, and the quality is most likey adequate for most users.

As for where they're made, I was told that all the All-Clad roasting pans are made in Korea now. The Calphalon, and every other pan you'll see out there (except Le Creuset), is made in China. In the end, the better quality of the All-Clad won me over. But check for yourself.

(...) This roaster is large enough to cook for a group of people. Tonight I had three whole chicken breasts plus potatoes in the same pan and deglazing was a breeze and the sauce was perfect. I would highly recommend this pan to anyone wanting a good quality, well made roasting pan.

I have not used the included roasting rack yet so cannot comment on it as I don't usually roast meats on a rack but it's nice to have it should I decide to use one.
