This saucepan has 2 negatives: It's extremely heavy, which is to be expected with cast iron, and you need to dry it immediately after washing to prevent rust from forming on the top edge of the pan. It will take longer to heat up than an aluminum or stainless steel pan, but it cooks more evenly and the heat is distributed through the sides of the pan as well as the bottom. Because the entire pan heats up (sides and bottom), the food cooks more evenly and ultimately faster. You'll need to use a lower heat setting than you might be used to because the cast iron retains a lot of heat. In addition to the enameled cast iron, this pan has a few other excellent features. 1) The lid contains a small hole for venting, which helps prevent liquids from boiling over. 2) The handle is heat resistant and stay cools during cooking. It's also oven safe. 3) The precision pour feature actually works. I just made pudding in this pan and was able to pour it into small bowls much more easily than with my old saucepan. Although this pan deserves 5 stars for appearance, design, and performance, I'd like to give the manufacturer zero stars for applying stickers to the pan that were almost impossible to remove. There was one sticker on the bottom and one on the side. After using mineral oil, a razor blade, and Chore Boy Golden Fleece, I was able to remove the residue of the adhesive after 45 minutes of scraping and scrubbing. It's absolutely infuriating when retailers and manufacturers apply these nearly permanent stickers.
